A very cool place that is part of the harvest host system. We were lucky enough to spend a night here. The owner gave us a tour of the facility where we learned a ton about this place. We also bought some syrup, obviously.

Fun facts:
Started in 1850s the business has stayed in the family.

They own 600 acres and tap about 17,000 trees using over 1,000 miles of tubing to collect over 3 million gallons of syrup that produces between 5,500 and 7,000 gallons of syrup a year. A vacuum pump system is used to maximize the flow of sap into ever increasingly large tubes. It takes 2 people about 1 month to tap all 17,000 trees averaging 250-400 trees a day per person.

In 1972 they grew large enough to make the sugar mill that produces the syrup on site. Prior to that they shipped the sap 5 miles down the road to another facility.

The state of new York taps less than 2% of it's trees. In contrast Quebec taps nearly 30% of its trees and accounts for 80% of the focal syrup market.

This place is the real deal. The pancakes are delicious, and the serving size is huge. And the maple syrup....oh my goodness. It's the best. They gave us a lovely tour of the maple collection system after breakfast, which is quite involved and sophisticated, and yet they maintain a home grown local feel. Everyone is friendly, and they make you feel right at home.
Get there early because the line to get in forms quickly and you'll be waiting outside...but rest assured, the wait is worth it.
