High Country Beef is simply the best beef around. I am amazed at how tender and delicious it is. Love the short ribs in tagine (Moroccan style).

We were just passing through, but Leo took the time to meet with us and explain his operation. We were not prepared to take home a quarter of beef, but we will the next trip. Leo had some burger that he was able to sell, and we bought enough to cook on our camp stove for the rest of our trip. Grass raised Highland beef, not corn finished. Leo took us out to the corral and showed us a few of the head down from the pastures for finishing. It was snowing, and Leo had to get to Breck that morning, but he still took the time. He's obviously proud of his operation and we are loving the product! Thank you, Leo!
