Tasted the Uncle Joe's Asiago-like cheese at the Pennsylvania Farm Show, Jan 2020, and was "blown away" by the exquisite taste. We mostly buy aged
imported Goudas and Cheddars and couldn't believe the complexity and depth of this gem. Bought a few wedges at the show and will be ordering more online - maybe a whole wheel...

A wonderful gem. They make some of the best domestic cheeses I've tasted, especially the Four Leaf Clover and Grateful Ched aged cheddars. They are characterized by a complex and nutty flavor, with consistency akin to Parmiggiano Reggiano or Grana Padano. I've found them a perfect pairing with wine and charcuterie, but also delicious grated over pasta.

I bought some Smoked Galen's at the farmer's market in Market Square, Pittsburgh. It was vacuum packed in plastic. It tastes like plastic. I'm not sure if the packaging has something to do with that, but it was not a good flavor.
