We ordered a quarter cow; delivery was timely, and communication was good with the team from Bastrop! The beef order was received in insulated boxes, still frozen which was great because we were out until midday. The beef looked good from opening and I looked forward to seeing how it tasted. Ground Beef was delicious, and the steaks were amazing and juicy. The added cooking guide was great because it helped us not overcook the beef!

Great quality on our cuts of beef. We ordered 1/4 of a cow and we’re really happy with the product! Cooked some ground beef the day we got our order and it was so good. I could actually tell the difference between it and store bought grass fed. Tim was also really friendly and helpful filling me in on our order.

I am writing to express my disappointment with the quality of the meat I received (USDA Select). I purchased half a cow, weighing 202 pounds, at a cost of $9.59 per pound, totaling $1,937.88. Unfortunately, the meat has not met my expectations in terms of quality or fat content.

Here are the issues I've experienced:

Ribeye steak: Tough and dried, regardless of cooking method.

Beef cubes: Similarly tough and dried.

Chuck roast: Despite slow cooking in a crock pot, the texture remains undesirable.

Sirloin steak: Consistently tough and dry.
T-Bone : Dry
Beef rounds : Good
Brisket next to cook but can't be any more disappointed

Ground beef: Acceptable but not outstanding.

Soup bones: Yet to try, but visibly lacking fat.

I have attempted various cooking methods, including grilling, cast iron searing, reverse searing, sous vide, and low-sear techniques. Despite these efforts, the results have been consistently unsatisfactory. I’ve also tried adding beef tallow, butter, olive oil, and marinating, but the meat remains tough and lacking in flavor due to insufficient fat content.

Could you provide an explanation or visual reference for your "fat concept"? I would appreciate it if you could send me a picture of the expected fat distribution in your USDA Select meat, as mine appears to be excessively lean with little to no fat.

Packaging was great, the people are great but the steaks are horrible. Get all ground beef and get ready to crockpot your steaks because that’s the only way you can eat them. We have cooked every kind of steak in multiple different ways but they all turned out so tough that you can’t eat them. I like to support smaller companies but I highly recommend using somebody else. We had to cut the steaks up in very small bites so our dog would eat them.

It has been about 2 months since I picked up my 1/2 cow I bought from Bastrop Cattle Company. I can't tell you how great it has been skipping the beef section at the grocery store!

The whole process was great. Patti went over the cut sheet with me and I actually got to meet her when I picked up the meat at the ranch. I've tried a little bit of everything and always looking for new recipes since I have every single cut of a cow.

Highly recommend giving their meat a try. Great to know the cows are grass fed right down the road and live a good life. Drive out to the ranch to pick your order up and you get to see it in action.

p.s. Max seems like a pretty cool dude also

We are very committed to supporting local businesses and why we purchased the Fancy & Functional Box from Bastrop Cattle Company. This was done as means of evaluating their products prior to purchasing a ¼ side of beef.
Overall, the meat was consistent with grass fed and finished beef. However, the ground beef was higher in fat than we like and a few packs of it, for some reason, didn’t seem to be fresh. The steaks were of good quality and also consistent with grass fed and finished beef except for two of the ribeye’s which were so tough we could not eat them. I am very familiar with grass fed beef and cautious about over cooking knowing this can contribute to toughness.
Our order was filled as placed with a gracious complimentary addition of liver which we greatly appreciated.
We did reach out to share the above-mentioned issues, however at this time we have not received a response.
