When he was living in West Africa, agricultural engineer Claudio Corallo found forgotten cacao trees on the islands of São Tomé & Principe. He had finally met with his destiny. And for more than 30 years now, he's been growing biodynamic cacao beans and making matchless chocolate - an inspiring bean-to-bar success. The shopkeeper was very knowledgeable, warm, and passionate - I believe a business partner, who was actually planning his next trip to São Tomé. He had us taste numerous samples, a fireworks of flavors. I loved the bar with Liberica coffee, and I also recommend the chocolate covered roasted coffee beans. The bar with sugar crystals is a mystery of powerful dark chocolate with a soft finish. They also had my favorite sugarless treat but hard to come by: raw (and roasted) coca nibs. Prices are high but you're paying for rare quality and it all goes to the producer and his team.

We came across this place while walking in downtown Palo Alto. It's one of the best fine chocolates in bay area. They've free tasting and we got to try the hot chocolate.
If you're a chocolate lover, this is a place for you! Just cocoa beans and you've an amazing chocolate.

This chocolate place right in the heart of Palo Alto downtown is a green of a place for people who are very interested in trying out great dark chocolate. The owner of this shop goes by the name Panos and is a very knowledgeable chocolatier. He is very passionate about chocolate and the art of making them. He was kind enough and patient enough to give us samples of the offerings of various flavors and explain how to savor them. We bought the dark chocolate infused with Liberico coffee, Loucouras coffee bean truffle and the chocolate with alcohol infused grape s. The chocolate that we purchased was 70% dark chocolate. We also tasted the 100% dark chocolate as well. It was very smooth and had a very distinct chocolate flavor. The owner mentioned that the 100% one is not bitter because he has removed the ingredient that cause the bitterness while manufacturing the chocolate, so that we get the actual taste of the chocolate itself and not it’s overwhelming bitterness.

The various chocolate bars come at a cost of 28.50 USD(slightly pricey, but definitely worth the cost).

The beans themselves were amazing. but it seems they don"t know how to do the chocolate tempering(you would see the marble patterns on the chocolate surface). It causes the texture of the chocolate to be grainy. I feel like it's a bit pricey for the quality.

What an experience! Horrified by the line at Ramen Nagi we wandered away and stumbled upon Alegio. We loved the story and the passion of Panos! The chocolate is top notch as well. We sampled many, and our favorites were the ginger, grape/wine, and salt and pepper. We loved the purity and depth of the chocolate flavors. Will be coming back!

Quirky, fun proprietor. The Ubric (“wine chocolate”) is very good. The 100% is great for sugar free hot chocolate (add a little allulose or some such if you want it sweet without the calories)
