It's been a few days since we went here and it's time to write this;

Uh-maze-eeeng!!! The place is kinda small, so I shudder to think how cramped it will be when the weather gets warmer and the locals come out of hibernation. But, well worth it!!

The staff was GREAT and helpful. Very patient for "first timers" trying to figure out what we wanted.

But the pizza itself? Dood!!! Easily in my top five pizza places. Maybe it was because it was our first time? I dunno, but we'll be back for sure!!!!

This place is shocking. Ever since the original owner took it back, the food is really gone downhill. The pizza is good but the owner tries too hard to make things fancy and ends up destroying something that’s supposed to be simple and easy to make by over complicating the ingredients. It’s pure arrogance. The “no ranch” shirts were hilarious. It’s a pizza place in Colfax Ca of all places. It’s not a high end restaurant. Then they made ranch but it’s absolutely disgusting. Just keep it simple and stop trying to add your own ingredients like a kid does when trying to impress their parents. Ranch shouldn’t taste like sour cream and ceased dressing. The Caesar salad was the fishiest I’ve ever tasted. It’s simply that the owner is too arrogant to just make a simple great tasting dish without trying to over complicate it by adding unnecessary ingredients. It’s sad because it used to be a great place to eat. I don’t see them sticking around much longer just like every other restaurant in Colfax. Know your demographic and understand that keeping things simple and easy is the way to get repeat customers. If your customers want ranch with their pizza, you don’t go out and print shirts that say “ no ranch” that alone shows the insane amount of arrogance the owner has.

EDIT: the owners reply is exactly my point. He also doesn’t understand math as he states that 99% of people like their pizza” I will never support this business again just because the owner is a a joke. You don’t reply to reviews like this just to be snarky. His grandiose response is a testament to how he runs his business and should be ashamed of his behavior. I’ll just keep reviewing on different platforms.

Lovely little (tiny) pizza place. Prepare to get cozy with other guests. Napoli with pears, Rosmario with mushrooms, deep dish cheese…wonderful crust, chewy with a little char from the wood fire oven. $3.50 Peroni’s that’s crazy cheap. I certainly would love to be a guest here on a regular basis. Tiramisu, Cannelloni and Black Forest chocolate cake (tasty but on the sweet side) satisfied the sweet tooth and finished out the afternoon.

Parking can be a pain, had a local drive in and steal a spot when I was backing in. Plan accordingly and walk a little to avoid the grumps and everything will be ok.

Best pizza I have had in California. The crust was thin, crispy with a bit of chew. The toppings are fresh, varied and flavorful. Make sure you grab some chili oil at the counter! Next time I want to try the pasta, which looks delicious. I guess word had gotten out, the place was packed. Low key place with reasonable prices.

We were making our way back to Idaho picking up a car in California and stopped in for a bite here at Pizzaiolo. Food was excellent! We had pizza, salad, and Gelato. Took a little longer than we'd hoped, but was worth the wait. We're glad we stopped and even got road snacks next door at the gas station while we waited.

This place totally caught me off guard with the level of deliciousness and care they put into their pizza and small establishment. We just picked a random pizza spot coming home from a snow trip and didn't know we were getting some of the best wood fire pizza you can get. The garlic bread was amazing. I highly recommend the meatballs. I could only eat so much in our one visit but I'd have to guess that everything on the menu is fresh, flavorful, and felt to me leaps and bounds above any mom and pop pizza joint and more in line with swanky top end pizza joints but for a fair price and with a masterfully done attention to taste and deliciousness.
