My family has been buying and eating this goat cheese for decades. When I think of goat cheese, I crave this one. I love the salty rind. This year my sister brought goat cheese for me all the way to Plano Texas. I gotta say the jalapeño goat cheese is my new favorite!

Do you love goat cheese? like authentic old world style goat cheese? Then visit Zubal's Goat Dairy in Southern Colorado. Its a bit off the I 25 just north of Trinidad and South of Pueblo, but it is worth the detour to visit Tom and Doris Zubal and get some of their fantastic goat cheese. And if you are lucky, you will get cheese that was made the previous day from their dozens and dozens of goats.

And if you can't take the detour, visit any number of specialty grocers in pueblo or the area to pick up a small wheel.

This isn't the fancy soft goat cheese you get at most grocers, but it is packed full of flavor.

Oh, and they have some fantastic Ricotta too! That is perfect with honey (preferrably honeycomb) and toast.
